Why don't you spend such a homey time with us, sharing from the same pot or kettle and having casual conversation while eating together?
In the basic Japanese home cooking, “Ichijyu Sansai” (one soup and three vegetables), fleshy cooked rice and soup with dashi broth are indispensable first.
In addition, there is one main dish and two side dishes, which are prepared with a balance of flavors and nutritional content.
Home-style cooking, such as using local ingredients and incorporating seasonal ingredients, strongly reflects the culinary culture of the region.
Kanazawa is blessed with both the sea and mountains, and a rich variety of ingredients are available in each of the four seasons. Using such fresh and rich ingredients from Kanazawa, we are waiting for you with a lineup of home-style dishes that will make ourselves think, “I would be happy if this were today's menu!”
The dishes include rice, miso soup, deep fried foods such as tempura or fried chicken Tatsuta, Dashimaki Tamago (egg omelet), and Kaga vegetable dishes.
You will learn how to cook rice, traditional soup stock, and useful wisdom unique to home cooking.
We also teach the Japanese food culture of using and savoring ingredients with gratitude and respect until the very end.
The ingredients we use are purchased at the Omicho Market, known as “Kanazawa Citizens' Kitchen,” in the hope that our customers will enjoy tasty, local, seasonal food.
Kaga-bocha tea is served with the meal, and dessert is available after the meal.
The beautiful Kutani ware and lacquerware used for serving are also carefully selected so that you can feel Kanazawa through the meal.
The experience will be held in a traditional Kanazawa townhouse. The building, which was originally a dyeing shop and residence, has been renovated to make the experience more enjoyable while firmly retaining the original wonderful architectural parts. Please enjoy a good time with home-cooked meals in the unique atmosphere of a Japanese house.
